Chianti DOC Vin Santo’s pale yellow-golden colour leans towards amber. The characteris-tic bouquet and flavour can be dry or more rounded, toothsome, endearing and sweet, with at least fifteen and a half per cent alcohol. The Occhio di Pernice (‘Quail’s Eye’) sorts tends towards pinkishness and is warmer, more intense, softer and velvety, with at least seventeen per cent alcohol.
